I’d say it’s pretty quiet.The mini crib mattress comes with a soft outer cover we don’t really notice any noise when our baby moves.

No,it has a breathable cover, which can be removable and machine washable.
Which side is stage one and which side is stage two?
I judge by pressing both sides with my hands, relatively speaking,the firm side is for infant,and the softer side is for toddler.
Is this a memory foam mini crib mattress?
Yes but not quite, dual firmness with different materials,the softer side is gel memory foam but the harder side is high density support foam.
